Cantucci alle Mandorle

Classic and traditional Italian almond biscotti.


This recipe comes from my Nonna Rora. She knows I love to bake, so she passed this traditional recipe to me. I made the biscotti for Easter and my mom who doesn't like sweets much loved them!



Cantucci with Almonds

Ingredients


4 cups of flour

1 ½ cups of sugar

1 cup of soft butter

5 eggs

3 tsp. vanilla extract

3 tsp. baking powder

1 ¼ cups of almonds

1 pinch of salt

Directions


On a pastry board, knead everything together until you get a compact dough. Divide dough in half and form two loaves, place them in a baking tray lined with parchment paper. Bake at 350° for about 20 minutes. Remove from oven and slice into thin pieces. Place back on tray and bake until golden brown on both sides.
